Sunchokes are a tubular-shaped, thin-skinned root vegetable of the sunflower plant family also referred to as Jerusalem artichokes.
This naturally sweet, naturally low-glycemic root vegetable looks like a sweet potato, but it’s much more hydrating than its starchy counterparts. “Yacon root” literally translates to “watery root” in the Incan language, and its flavor has been compared to apples, pears and watermelons.
The sweet potato or sweetpotato is a dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. Its large, starchy, sweet-tasting, tuberous roots are a root vegetable.
Cassava is a root vegetable. It is the underground part of the cassava shrub, which has the Latin name Manihot esculenta. Like potatoes and yams, it is a tuber crop
The carrot is a root vegetable, usually orange in color, though purple, black, red, white, and yellow cultivars exist. They are a domesticated form of the wild carrot, Daucus carota, native to Europe and Southwestern Asia.
